This is one of our favourite brewers for it's simplicity, availability of filters, and ease of use. We've managed to recreate time, and time again perfect brews without much thought to grind-size, nor brew time.
This brewer is made of Tritan™
We find this brewer to work exceptionally well for washed processed coffees, and we brew with a ratio of 1:16.5, where we've found 24g coffee to 400ml of water has been a great standard. When brewing with a Clever at our coffee bar, we use 15g coffee to 250ml of water.
To Brew:
1. Grind 24g of a coffee of your liking to a medium-find grind.
2. Boil your water to an appropriate temperature. For washed coffees we use a temperature of around 97C, for natural, more heavily processed, or darker roasted coffees, we prefer a lower temperatur of around 93C.
3. Place your Clever dripper on your benchtop and insert a 1x4 filter. Rinse the filter and preheat your brewer with warm water. Place your brewer on a carafe or brewing vessel to release water and preheat vessel. Discard water.
4. Place your brewer on a scale and weigh, or measure up 400g/ml of water into your brewer.
5. Start a timer and pour your ground coffee on the surface of the water. Give the coffee a gentle stir to be sure that all coffee comes in contact with water. Allow to brew for 2 minutes.
6. At 2 minutes, give the brew another stir and wait 30 seconds for the grinds to settle. After the 30 seconds, place your Clever dripper on your brewing vessel to release the coffee. If the coffee has been ground correctly, you should have a total brew time of 3 minutes and 30 seconds.
